- Open a jar of fish, drain the liquid, mash pink salmon in a plate with a fork.
- Pour the boiled onion into a bowl of boiled rice. Add mashed pink salmon to this mixture, add red or black pepper, if desired, add salt if not enough salt.
- Prepare a baking sheet: cover it with foil or parchment paper, you can simply grease it with vegetable oil, sprinkled with flour or semolina.
- To form pies, sprinkle flour on a table or board, cut a small piece of dough, knead it with your hands or a rolling pin. Parts for the following pies should be cut to the same size.
- Put a generous filling on the dough. Pinch like a regular pie, folding the ends with a flagellum. Thus, you need to prepare all the pies for baking.
- Shake 1 egg for lubrication. Put all the pies on a baking sheet, grease them with a brush. Preheat the oven to 180 ° C, set a container with water to the lower level so that the pies are not dry. Bake for 30–35 minutes.
Important! Do not overdo the pies in the oven, otherwise the dough will be dry and stiff.

- Cook the dough. Add 1 teaspoon of sugar and flour, yeast to warm water. Mix everything and leave for 15-20 minutes. for lifting.
- Break the egg into the bowl, add the suitable dough, stir with a whisk, pour warm milk and bring to a homogeneous consistency again. Set aside.
- Pour 450 g of flour onto the table, add 1 tsp. salt, 2 hours sugar, mix everything. In this mixture, grate well-chilled butter or margarine on a grater, periodically interfering it in the dough. In the resulting mass, make a deepening, pour the liquid mass into it in 3 doses.
- The dough does not need to be kneaded. It should be collected in a lump so that the oil does not have time to melt. Wrap the dough with cling film, put in the refrigerator for 2-3 hours. During this time, prepare the filling.
- Rinse fresh salmon fillets, dry, cut into very small pieces. Fold in a bowl, add lemon juice, salt, mix, leave to marinate for 10-15 minutes.
- Cut thinly onions into a quarter of a ring.
- Lubricate the pan with vegetable oil. Take the dough out of the refrigerator, shape it in the form of sausages, cut into equal parts. Each piece must be shaped into 5–7 mm thick cakes using a rolling pin.
- At the bottom of each part put a little onion, lay the pickled fish on top. Fasten the edges of the cake to the middle, leaving a hole. Grease the pies with whipped yolk. In the center of each pie, put a piece of butter, about 1 tsp.
- Preheat the oven to 180 ° C, bake for 30–35 minutes.
Important! Puff pastry for cooling need not be put in the freezer.
