Selection and preparation of ingredients
To prepare a delicious raspberry wine, you need to use high-quality raw materials. Fresh berries need to be sorted out, discarding green, rotten or mold-damaged fruits that can harm the finished product. You can not wash raspberries - on its surface there are wild yeasts that trigger the active fermentation process.
It is recommended to make the drink in a clean glass container, through the walls of which it is clearly visible how successfully the fermentation process proceeds.
Raspberry Wine Recipes
You can make homemade raspberry wine in various ways, but they are all based on one common simple technology. First, fresh fruits must be mixed with sugar or sweet syrup, and then leave the mixture in a warm place so that it can ferment. If it is not possible to immediately use raspberries for processing, then you can freeze it in the freezer, after removing the stalk from the berries.

Classic recipe
5 bottles of 3 l 20 minutes / 1 month
Nutritional value per 100 g:
- Peel the stems from the berries, put the fruits in a large plastic container.
- Add 5 kg of sugar to them, pour water into the container.
- Stir the resulting mixture, crushing the berries with your hands. Sugar should be completely dissolved in water.
- Put the container with the berry mass in a warm place for 4–5 days so that the liquid actively ferments. During fermentation, mix the mixture thoroughly 3-4 times a day so that it does not become moldy.
- Strain the fermented mass through a sieve to separate the berry meal from it. Pour the resulting liquid into clean glass containers, filling them in 2⁄3 volumes.
- For further fermentation, put the container with the wine in a warm place, covering it with a lid with holes on top - this is necessary for the exit of gases.
- After 10 days, you can add 400 g of sugar to the container with raspberry liquid. Mix thoroughly and leave again for fermentation. After 7 days, add another 400 g of sugar to the container with wine, mix. Leave to ferment for another 10 days.
- Prepare clean glass bottles. Pour the drink into them using a silicone hose. At the same time, the edge of the tube must be lowered into a container with unfiltered liquid mixture so that it is 5-6 cm higher than the sediment formed at the bottom.
- Close wine containers with plastic caps. Put the bottles in the basement for 7 days, and then once again filter the drink from the sediment, pouring it into clean glass containers.
Important! To get fortified raspberry wine, you can add 50-150 ml of vodka or cognac for every 1 liter of prepared beverage.
Without the use of water

- Remove the stalks from raspberries, put the berries in a clean glass jar.
- Add 500 g of sugar to the fruit without mixing it with raspberries. The container should be filled with ingredients at about 2⁄3 depth, because in the process of fermentation the berry mass will increase in volume.
- Put a clean medical glove on the neck of the can, fixing it with electrical tape. With a needle, make several small holes in the glove for the release of gases.
- Put the jar of berry mass in a warm place for fermentation for 5-7 days.
- Strain the fermented raspberries through a fine sieve into a saucepan, separating the berry meal from the juice. Add 60 g of sugar to the resulting liquid.
- Put the stewpan with future raspberry wine on a slow fire. Slightly warm the mixture, stirring the sugar until completely dissolved, so that the liquid is slightly warm and continues to ferment.
- Pour raspberry drink into a clean jar. Put on a medical glove with openings for the exit of gases on the neck of the tank.
- Remove wine for further fermentation in a warm place for about 1 month. When the liquid ceases to emit gases, pour it into a clean glass container, cover with a plastic lid and put it in the basement for storage.

From fermented jam

- Pour the jam into a clean glass jar of the appropriate size. Add water.
- Stir mass. Close the container tightly with a plastic lid with a small round hole made in it.
- Insert the edge of the plastic hose into the hole on the lid, and lower the second edge into the adjacent water bottle to let the gases escape.
- Put the container with the raspberry drink in a warm place for about 1 month for fermentation.
- When the mixture ceases to emit gases, filter it from the sediment, pouring the liquid into a clean glass container using a plastic hose.
The period of fermentation of wine prepared according to this recipe depends on many conditions (ambient temperature, amount of sugar in jam, etc.) and can range from 1 to 3 months.
Important! For the preparation of raspberry wine, jam covered with mold cannot be used - it will not ferment and can cause serious poisoning in a person.

- Put frozen berries in a clean container of a suitable size, leave them at room temperature for thawing. The juice that is formed can also be used to make wine.
- Add 0.5 kg of sugar, raisins and water to thawed raspberries. Mix all the ingredients so that the sugar is well dissolved.
- Cover with gauze a container 2⁄3 filled with liquid berry mass. Put it in a warm place for 10 days for primary fermentation. Mix the mixture 3-4 times every day so that it does not become moldy.
- Strain the fermented mixture of raspberries, dried fruits, sugar and water through a fine sieve to separate the pulp from the sweet berry syrup. Dissolve another 0.5 kg of sugar in a liquid.
- Cover the container with the raspberry drink with a clean medical glove, make several small openings in it for the release of gases. Put the wine in a warm place for 2 months for secondary fermentation.
- Pour the fermented mixture into a clean glass container using a plastic hose to separate from the precipitate. Seal the dishes with the drink tightly and put them in storage.
